And yes, you read correctly: dinner. Servings: 2 Total Time: 40 minutes Ingredients: 4 eggs 2 cups red potatoes (chopped) 2 tablespoons oil (divided) 1 medium onion 1 green pepper 1 cup roma tomatoes (diced) Avocado (optional) Chives (optional) Bacon (optional) Directions: Preheat oven to 425 degrees. Next, line a baking sheet with aluminum foil. Toss potatoes with 1 tablespoon oil, salt, pepper, and spread evenly on pan. Place in oven, stirring once halfway through cooking, until potatoes are golden brown, about 30 minutes. They should be tender. Add a tablespoon oil to pan and add onions and green pepper. Cook until onions are translucent, about 3-5 minutes. Add tomatoes to pan and turn heat to low. Add potatoes and combine. Cook eggs in a separates pan–I prefer sunny side up, but you can scramble them as well depending on preference. Finally, transfer onions, pepper, tomato, and potatoes to your bowl or plate. Top with eggs. If desired, you can add a side of avocado, bacon, or top your breakfast bowl with chives.

Enter: the lemon drop martini. All you need are 3 ingredients and a cocktail shaker–I recommend this one if you are in the market for an affordable shaker. In the spirit of brevity, I’ll get right to the recipe, but if you’re looking for some tips, they’ll be below.   Ingredients: 1/2 lemon ( ~ 1.5 tablespoons lemon juice) 0.75 oz simple syrup 3 oz vodka sugar for the rim Directions: Juice the lemon into a cocktail shaker—I typically eyeball this, but it ends up being about 1.5 tablespoons. Add simple syrup, vodka, and ice to the shaker and shake until properly mixed. Cover the rim of your glass in lemon juice and coat in sugar. Finally, pour the contents of the shaker into a glass of your choosing. For an added bonus, you can garnish with a lemon slice. And that’s it! The easiest lemon drop martini you’ll ever make. The most difficult piece will be picking what glass you want to showcase it in. I prefer these from Crate and Barrel because they are simple and SO affordable. That’s the glass shown in these pictures. I especially like using cheap glasses when entertaining because you won’t be upset if something is to break! And again, check out this cocktail shaker if you’re looking for one–it’s cheap, and the lid doesn’t get stuck or leak like others I have used. When making this recipe, I HIGHLY recommend fresh lemon juice. You can seriously taste the difference if you don’t. And as for the type of vodka, I can’t say enough good things about the Kirkland brand vodka from Costco; it’s cheap without sacrificing quality.
