
Breakfast Bowl (for Dinner)

A breakfast bowl is one of my favorite things to make for dinner for two simple reasons: it tastes delicious, and it’s QUICK to make! And yes, you read correctly: dinner.

Total Time: 40 minutes
Ingredients:
- 4 eggs
- 2 cups red potatoes (chopped)
- 2 tablespoons oil (divided)
- 1 medium onion
- 1 green pepper
- 1 cup roma tomatoes (diced)
- Avocado (optional)
- Chives (optional)
- Bacon (optional)
Directions:
- Preheat oven to 425 degrees.
- Next, line a baking sheet with aluminum foil. Toss potatoes with 1 tablespoon oil, salt, pepper, and spread evenly on pan. Place in oven, stirring once halfway through cooking, until potatoes are golden brown, about 30 minutes. They should be tender.
- Add a tablespoon oil to pan and add onions and green pepper. Cook until onions are translucent, about 3-5 minutes. Add tomatoes to pan and turn heat to low. Add potatoes and combine.
- Cook eggs in a separates pan–I prefer sunny side up, but you can scramble them as well depending on preference.
- Finally, transfer onions, pepper, tomato, and potatoes to your bowl or plate. Top with eggs.
- If desired, you can add a side of avocado, bacon, or top your breakfast bowl with chives.
