Breakfast Bowl (for Dinner)

A breakfast bowl is one of my favorite things to make for dinner for two simple reasons: it tastes delicious, and it’s QUICK to make! And yes, you read correctly: dinner.

Total Time: 40 minutes

Ingredients:

  • 4 eggs
  • 2 cups red potatoes (chopped)
  • 2 tablespoons oil (divided)
  • 1 medium onion
  • 1 green pepper
  • 1 cup roma tomatoes (diced)
  • Avocado (optional)
  • Chives (optional)
  • Bacon (optional)

Directions:

  1. Preheat oven to 425 degrees.
  2. Next, line a baking sheet with aluminum foil. Toss potatoes with 1 tablespoon oil, salt, pepper, and spread evenly on pan. Place in oven, stirring once halfway through cooking, until potatoes are golden brown, about 30 minutes. They should be tender.
  3. Add a tablespoon oil to pan and add onions and green pepper. Cook until onions are translucent, about 3-5 minutes. Add tomatoes to pan and turn heat to low. Add potatoes and combine.
  4. Cook eggs in a separates pan–I prefer sunny side up, but you can scramble them as well depending on preference.
  5. Finally, transfer onions, pepper, tomato, and potatoes to your bowl or plate. Top with eggs.
  6. If desired, you can add a side of avocado, bacon, or top your breakfast bowl with chives.
