    Breakfast Bowl (for Dinner)

    A breakfast bowl is one of my favorite things to make for dinner for two simple reasons: it tastes delicious, and it’s QUICK to make! And yes, you read correctly: dinner. Servings: 2 Total Time: 40 minutes Ingredients: 4 eggs 2 cups red potatoes (chopped) 2 tablespoons oil (divided) 1 medium onion 1 green pepper 1 cup roma tomatoes (diced) Avocado (optional) Chives (optional) Bacon (optional) Directions: Preheat oven to 425 degrees.
